STYLE DESCRIPTIONS
Concentrated crushed is a non-standardized product. It has a coarse finish and may contain seed particles and occasionally whole seeds. Usually concentrated crushed is packed without salt.
Non-formulated pizza sauce is also a non-standardized product. It is made in the same way as concentrated crushed. Non-formulated pizza sauces contain salt and dried leaf basil. They do not contain oil or other seasonings as prepared pizza sauce styles do.
Both concentrated crushed tomatoes and pizza sauces are made from
unpeeled crushed tomatoes that are strained and evaporated. Heavy, extra heavy, super heavy from round varieties and super heavy from pear varieties are available.
Concentrated crushed is often confused with coarse ground in puree. Coarse ground in puree is a mixture of ground peeled tomatoes and tomato puree.
